Ingredients
  

  • 2 cups cooked chicken grilled or shredded
  • ½ cup BBQ sauce
  • 6 cups romaine lettuce chopped
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 cup black beans rinsed and drained
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • ½ cup shredded cheddar cheese
  • 1 cup tortilla strips
  • ½ cup ranch dressing
  • 2 tablespoons green onions sliced

Method
 

  1. In a medium bowl, toss the cooked chicken with BBQ sauce until well coated.

  3. Top the salad with BBQ chicken, shredded cheddar cheese, and tortilla strips.
  4. Drizzle ranch dressing over the salad. Garnish with sliced green onions.
