Ingredients
  

  • 1 English cucumber sliced or diced
  • 2 cups ripe tomatoes cherry, grape, or chopped
  • 2 ripe avocados diced
  • ½ red onion thinly sliced
  • 3 tablespoons lemon juice freshly squeezed
  • 2 tablespoons olive oil extra virgin preferred
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper

Method
 

  1. Prepare the vegetables by slicing the cucumber, halving or chopping the tomatoes, slicing the red onion, and dicing the avocados.
  2. In a small bowl or jar, whisk together lemon juice, olive oil, salt, and black pepper until combined.
  3. Place the cucumber, tomatoes, red onion, and avocado into a large salad bowl.
  4. Drizzle the dressing over the top and toss gently to coat, being careful not to mash the avocado.
  5. Serve immediately while fresh and crisp.

Notes

  • Garnish with fresh herbs like parsley or basil for extra flavor.
  • Add crumbled feta if you want a touch of saltiness.
